Our Cheese Wedding Cake
Sweet dreams are made of cheese!!
When Chris and I got engaged the first thing we agreed on was that we wanted our wedding cake to be a bit different from a standard cake. We wanted it made out of cheese! We’re massive cheese lovers and the thought of going to taste different cheeses to make our wedding cake really excited us. Plus, we knew we could save some money by serving it up with crackers and chutney as our evening buffet.
We did a bit of research into various designs, textures and shapes and soon decided we wanted something rustic with vibrant fruits that matched our summer berry wedding theme. A family friend supplied the tree trunk base for the cake to sit on and we also found a great picture on Pinterest that involved iced mice so decided we had to have them in our design.
We had a look at various wedding cheese cake packages at different wedding venues and got quotes from wedding caterers and were really quite shocked at the prices. To feed 120 guests, we were being quoted over £1000, it just wasn't something we were prepared to do, so we set about finding a little delicatessen to supply the cheese to make it ourselves.
Dad did the research and found a little deli set out in Emsworth called Emsworth Delicatessen.
When we arrived, a warm and friendly lady greeted us. She grabbed us some drinks, sat us down and we started listing some of our favourite cheeses. She then went away to the counter and came back with a plateful of different scrummy cheeses for us to try. I’d already had in my mind a design with iced mice, grapes and figs all over it, the trick was finding the right size cheeses to sit on each layer and provide the ridges for the fruit. Some of the cheese wheels, we were shown were huge and this got us very excited! She noted down our favourites and told us Ben Laycock the owner would be in contact with a quote.
Ben was very easy to talk to and quickly responded to all our concerns over email. Our biggest concern was the fact that our wedding date was in the middle of August and we couldn't have giant cheese wheels sweating it out in the summer heat, stinking out our beautifully decorated barn.
We worked out a plan and Ben put together such a great spec/price, that we agreed for him and his team to come and set up the cake for us.
The final spec for the cake looked like this:
Top tier - Godminster heart 400g Second tier - Oakwood smoked 2kg Third tier - 1/2 Wensleydale with cranberries, 1/2 Wensleydale with apricots 2.5kg Fourth tier - Colston Bassett blue Stilton 4kg Fifth tier - Brie de Meaux rouzaire 3kg Bottom tier - Wookey hole cave aged cheddar 5kg Individual cheese - capricorn goats cheese 5x100g Individual cheese - red devil 5x200g
It was a lot of cheese!!!
A couple of our friends who are expert bakers designed our mice, even involving a superman dressed one to feature on top to represent my husband and his love of superheroes!
The cake was spectacular. When we saw it on the day, it took our breath away. It was everything and more than we could have ever hoped for. Ben and his team waited till the last minute to set up the cake so that we had maximum refrigeration time for the cheese and dad created a polystyrene box cover with ice packs built in to the walls to keep the cake cool during the ceremony and drinks reception. It was then uncovered for the wedding breakfast, we cut the cake straight after dinner and the catering team took it away for serving up for our evening buffet.
The cake got so many compliments and it went down a real treat as our evening buffet. We served it up with a variety of biscuits, a selection of chutneys and pickles. The guests couldn’t get enough of it. We were expecting a lot more cheese left over!
